Cilantro Lime Rice {Cafe Rio Style}

I love Café Rio’s rice so much but with winter in full force (and my desire to never leave the house in snow) I figure I better learn to make it so I can kill two birds. One for lunch and the other for dinner, chicken goes great with rice.



This recipe is beyond simple because you can make it in a rice cooker or crockpot. I think mine actually tastes better than Café Rio’s, because its made with love and its always soft and fluffy.

Chelsey’s Cilantro Lime Rice:

2 Cups uncooked long grain white rice
2 Cups chicken broth
2 Cups water
1 Tbs salt
2 Tbs butter or olive oil
3 Cloves minced garlic

1 Large lime (juiced)
1 Bunch of cilantro chopped
2 Tbs Sugar

Rice cooker or crockpot directions:

Add rice, chicken broth, water, salt, butter and garlic to a rice cooker or crockpot until its fully cooked. Add lime juice, chopped cilantro and sugar then fluff with a fork until fully incorporated. Serve and enjoy!

  1. I made this recipe. It’s really good!! Thank you!! I just want to comment that 2 Tbl of salt seems like a typo to me. Did you mean 2 teaspoons instead? I only added 1 teaspoon and it tasted just fine. If it is a typo, you might want to correct that.

    1. Thank you, I LOVE this recipe! Its 1 tbs salt and 2 tbs sugar (when you add the cilantro) Its a sweet rice, but you can always leave that out to make it savory.
