Easy Streusel Topped Blueberry Muffins


I’m all about making things from scratch, but then again there’s just those times where you’re in a rush and you know that no one will truly appreciate the fact that you used fresh lemon zest and love, so much love into the freshly made blueberry muffin batter.


So I simply make blueberry muffin mix as shown on the package. And make it feel a little bit more “homemade “by adding a real homemade streusel topping.

Easy Streusel Topping:


-4 tablespoons of butter
-1/4 cup flour
-4 tablespoons of brown sugar
-Half a tablespoon of cinnamon half a tablespoon of nutmeg

Directions:

Soften butter in the microwave to make it more manageable to work in the fingers. Warning: do not melt the butter they can’t be liquid! Then in the same bowl, add flour, brown sugar, cinnamon and nutmeg and start kneading it in between fingers. You may also use a pastry cutter to keep your fingers from getting too messy.  The end result should be a crumbly sand-like texture. Use about a tablespoon on top of each muffin and bake as directed.
