Warm Winter Cabbage Salad

Screen Shot 2016-02-05 at 3.06.46 PMDid you know that June (the Official start of summer) is only 15 days away!? What am I saying? 15 Weeks! SUMMER IS IN 15 WEEKS PEOPLE! So don’t ease up on your new years resolutions now, we don’t have time for that. We’ve got to get swimsuit ready before summer!

If you’re anything like me, you’re happy with your meal plan and eating clean, but sometimes you just want to mix it up. Luckily for you and I, I’ve teamed up with Veggie Lisa (not only is she a GORGEOUS fitness model, you guys, this chick is the real deal and she knows her stuff!) to bring you a power lunch series that will keep you on track with those swimsuit goals and blow your taste buds away with flavor. Honestly, her recipes are some of the best I’ve ever had, and I went to culinary school!

For the first recipe in this series we have a warm cabbage salad, its the perfect blend of salty and sweet and this huge salad has less than 150 calories and its SO filling! Obviously, its important to not only worry about calories (make sure your getting a good balance of clean carbs, fruits, veggies and proteins) but its kind of nice to have low calorie options when your in a snacky mood. Warm Winter Cabbage Salad

INGREDIENTS:

  • Cooking spray
  • 2 cups shredded cabbage (I like to buy bagged coleslaw)
  • Pomegranate seeds
  • Slivered almonds
  • Liquid coconut amino acids or soy sauce
  • Protein of choice: chicken, tuna, edamame or tofu

INSTRUCTIONS:

Heat up a nonstick pan over medium heat. Spray pan with cooking spray, add cabbage and sauté in pan until soft (usually 3-4 mins). Add in protein of choice. Remove from heat. Add a splash of aminos or soy sauce to taste. Top with pomegranate seeds, slivered almonds and cracked pepper. Serve warm, enjoy.
