Have you tried the Vegan Trail Mix cookies at Trader Joe’s? Don’t let the fact that is a vegan cookie scare you, they actually taste like normal cookies.
So funny story, I actually went on a vegan kick for an entire year (remember how I was a crash dieter?) and my parents brought them up for me to try when they came up to visit me. I knew that they were trying to be supportive so thanked them and ate a cookie. I. FREAKING. LOVED. IT! I offered them one to try, and they politely refused. To which I responded “Really? It’s not going to kill you. It’s just a cookie!” I honestly think they were weirded out but the fact that is was”vegan”. But eventually they tried them and now I’ll see baggies of these things in their pantry at home.
The last time I was in Salt Lake City with Veggie Lisa I shared them with her. Well, she was so impressed that she recreated them in this very close copy cat recipe…
Trail Mix Cookies
INGREDIENTS:
- 1 cup honey
- 2 eggs (you may use egg substitute)
- ¾ coconut oil, softened
- ½ tsp salt
- 2 tsp vanilla
- 1 tsp baking powder
- 2 ½ whole wheat flour
- 1 cup rolled oats
- 1 cup sunflower seeds
- 1 cup peanuts, chopped
- 1 cup dried cranberries (I use the 50 % less sugar)
INSTRUCTIONS:
Preheat oven to 375 degrees. Cream together with electric mixer oil and honey in bowl. Add salt, vanilla and eggs. In separate bowl combine baking powder, flour and oats. Add dry ingredients into wet, slowly. Stir in sunflower seeds, cranberries and peanuts. Scoop into balls and place on cookie sheet(I use a silpat mat). Bake for 9 minutes, cool on wire rack and enjoy!
honey and eggs are not vegan
You’re right. Honey and Egg substitutes would work, these are just similar in taste.
They also have egg substitute for baking or ripe bananas and for the honey you can use agave honey.
I used Pamela’s GF pancake mix, I used their chocolate chip recipe then added this recipe’s ingredients. They were delicious! Thank you!
How much coconut oil it says 3/4 .is that suppose to be 3_4 cup.n cam I use grapeseed oil instead
