I love a good Sunday brunch, and since having my little baby boy 12 weeks ago, leaving the house is a bit more of a commitment. So I decided to bring the party to my house with a simple, outdoor party that I could host during nap time! And while we’re all on the charcuterie board train, I decided to give it a try with the breakfast smorgasbord of my dreams.
This board is based on the actual Eggo Waffle Bar Truck that goes around the country spreading delicious Eggo Waffle goodness around!? Head over to the EggoWaffleBar.com to find a truck near you and for some delicious recipe inspiration with Eggo Waffles!

To set up this outdoor space we pulled our umbrellas out of storage and moved the furniture back out onto the deck. I added pops of color with new greenery, white lanterns, and some black and white pillows to make this space feel warm and inviting.

Get Creative and Start Building Your Board
Okay, if you’re feeling a bit intimidated by just the thought of attempting a charcuterie board, let me assure you that they are WAY easier than you think. You can totally do this, (scroll down to watch a time-lapse video of me putting it all together). The beauty of a well-done charcuterie board is making it easy to snack on while also looking visually appealing. Have fun playing with the ingredients and laying them out. The more you practice building them, the better and more confident you’ll feel.
To build my charcuterie board, I headed to Walmart and found things that I knew everyone would love. The goal is to allow your guests enough of a variety of ingredients to create their own masterpieces. I had three varieties of Eggo Thick & Fluffy Waffles: Eggo Original Thick & Fluffy Waffles, Eggo Blueberry Thick & Fluffy Waffles, Eggo Cinnamon Brown Sugar Thick & Fluffy Waffles. Look for my top three Eggo Waffle creations at the bottom of the post.
This breakfast inspired charcuterie board also included both flavors of the new Pop-Tarts™ Cereals: Pop-Tarts™ Cereal Brown Sugar Cinnamon and Pop-Tarts™ Cereal Strawberry, (just imagine your favorite Pop-Tarts™, in cereal form). These were great for snacking on or pairing with a fresh raspberry.
The only items that needed a little extra prepping were fresh fruit needing to be cut, and cooking some Johnsonville Original Breakfast Links (which I actually did at the same time…because I’m a multi-tasker like that.) I like them because they’re made with only premium cuts of pork, have 5 grams of protein per serving, and they taste amazing.
Again, once you have all of your ingredients prepped, just lay them in pretty piles that overlap slightly.

So easy!
Build Your Own Smoothie Bowl Station
In addition to the charcuterie board, I turned this little sitting area into a build-your-own smoothie bowl station. I chose the LALA Yogurt Smoothie Wild Strawberry and LALA Probiotic Yogurt Smoothies Mixed Berry as the base because I love these two flavors and the consistency, which worked perfectly for these bowls. They are also packed with billions of probiotics, 5 grams of protein, and are made with real fruit and natural ingredients. The toppings included fresh raspberries, blueberries, bananas, and granola.
To build a bowl, pour in your favorite flavor LALA Yogurt Smoothie, and top with whatever sounds good to you! Enjoy right away with a spoon!

My Top Three Waffle Creations
And now for the three best creations made from Eggo Thick & Fluffy Waffles. I’m a big believer in trying new recipes out before you serve them to your guests. So after playing around with a few attempts, here are the top three Eggo Waffle creations that everyone loved!

This one had Country Crock® Original Buttery Spread (it’s the go-to ingredient in the kitchen for all of your baking, cooking, and spreading), with Smucker’s Natural Strawberry Fruit Spread, on top of a toasted Eggo Blueberry Waffle with fresh berries. This one was my personal favorite of the three, simple and light.

This Eggo Waffle was a fun take on mixing hot and cold flavor profiles, by pairing a scoop of Blue Bunny® Bunny Tracks® with a scoop of Blue Bunny® Homemade Vanilla (Blue Bunny offers more than 75 flavors of ice cream and frozen products, so choose whichever flavors you’d like!), topped with fresh whipped cream and a drizzle of Mike’s Hot Honey. Mike’s Hot Honey is honey with a kick. The perfect combo of sweet and heat.

And this simple combination of Smucker’s Natural Strawberry Fruit Spread and Jif Natural Creamy Peanut Butter, served on an Eggo Original Thick & Fluffy Waffle, made for a simple and very comforting combo that totally hit the spot. It was so much fun to get creative with waffles and just have fun mixing up the flavor profiles to try something different.
Final Touches
I always recommend serving up your delicious masterpieces on cute plates, with a cloth napkin, and gold flatware. It’s a great way to use the things you already have on hand and it just makes it feel special. I think that taking the time to make sure all of the little details are there, make these moments together more memorable.
